›› Moist unsweetened cocoa powder quenelles

Ingredients
:

For 6 people


- 100 g of cocoa powder
- 25 g of icing sugar
- 50 g of flavourless jelly
- 10 cl of coffee
- ½ litre of whipped cream
- Raspberry coulis, raspberries and dried crêpes for decoration





Method
:

- Mix together the cocoa powder, the flavourless jelly and the icing sugar

- Add the coffee, and the cream, after having beaten it gently

- shape the quenelles with two soup spoons

- Place them on a plate and decorate with the coulis and the raspberries

For this month of November, Cyrille Gilbay the owner of the l'hôtel des Lacs** suggests " a mosaic of red fruit with bergamot orange jelly on a little light biscuit ".

Cyrille started his training at the Bar le Duc apprentices’ school. He then continued to learn by working for Mr Obriot, the owner of the « Les Ducs de Lorraine » restaurant in Epinal, which has a star in the Michelin guide, and he also learned to be a pastry cook in the Viard bread and pastry shop in Vittel.
